Miko Cuisine
Miko cuisine is a type of creative Japanese kaiseki cuisine devised by Head Chef Hiroaki Kanbara so that guests can experience the healthy and flavorful food that the people of Shinshu have long eaten in the Suwa area while dining during their stay.
Nagano Prefecture has always been one of the healthiest prefectures with some of the longest lifespans in Japan over the past decade, and the fermented foods, many types of vegetables, and mushrooms that have been traditionally consumed here are now gaining in popularity.

The Twenty-Four Solar Terms
Korekizara (the seasonal dishes that comprise Miko cuisine, the type of Japanese kaiseki cuisine served at Kamisuwa Onsen Shinyu) are prepared using ingredients and cooking methods devised in accordance with the twenty-four solar terms of the ancient calendar to give a sense of how time was tracked long ago.
Breakfast
Balance your body with a healthy breakfast
A large part of the reason that the people of Shinshu are honored as some of the healthiest and longest-lived in Japan is due to the local culture of fermenting miso, soy sauce, and pickles, and the custom of eating agar, the king of dietary fiber, on a daily basis. Please enjoy simple, nutritious, and wholesome food arranged on small, attractive Kutani ware serving dishes.
Pickle Buffet
For breakfast, you can enjoy pickle buffet featuring additive-free pickles made from traditional vegetables. The buffet always features numerous varieties of pickles that are only available locally, such as sweet vinegar pickles made from Otaki turnips harvested on the foothills of Mt. Ontake, as well as shibazuke pickles, made from Togakushi radishes, a traditional Shinshu vegetable. Enjoy some delicious pickles to start off a wonderful day.
Private Restaurant “Miko”
Enjoy seasonal Japanese kaiseki cuisine in a private room
You can leisurely enjoy both breakfast and dinner at the private restaurant “Miko.”
The interior is designed with a calm, warm atmosphere. Seating can be arranged in chairs or on tatami mats for the comfort of guests of any age, and the private rooms are spacious enough to accommodate a wheelchair. Please enjoy our health-conscious, gently-flavored Japanese kaiseki cuisine while listening to the soothing background music.
One-of-a-kind, special cocoon art
The Suwa area was the starting point of Japan’s Silk Road. In honor of this history, the restaurant hallways are decorated with special silk artwork handmade by peeling off the thin layers of cocoons one-by-one and weaving them together to resemble flower petals.
Our Food Allergy Policy
We have made the following three arrangements to ensure that guests with food allergies can safely enjoy their meals at Kamisuwa Onsen Shinyu.
(1)[Applicable allergens: 6 items]
Of the seven specified allergenic ingredients (eggs, milk, shrimp, crab, peanuts, buckwheat, and wheat), the hotel can make accommodations for all except wheat. If you wish for an ingredient to be excluded, please inform us at the time of reservation.
*Please note that wheat cannot be excluded because it is contained in seasonings such as soy sauce and miso, which are indispensable in Shinshu cooking methods.
*We are unable to accommodate any ingredients other than the six items specified by the hotel.
(2)[Guarantees and bringing in food]
We do not guarantee the complete removal of allergens from our food, as dishes are prepared in the same kitchen as those containing allergens. If you need assurance that your food contains no allergens whatsoever, please refrain from dining at the hotel for your own safety. If you are unable to dine at the hotel due to allergies or other reasons, you may bring in your own food. In such case, please contact us in advance.
(3)[Reception at least one week prior to stay]
If you wish for allergens to be removed, please contact us at least one week prior to your stay.
